Southwestern Eggrolls

I love the Southerwestern Eggrolls that you can get at Chili's. Here's a recipe to make them at home yourself. Great for get togethers. Everyone will love them. You can add or omit any thing you like and make them to your tasting.




Southwestern Eggrolls
2 Skinless Boneless Chicken Breast
1 Roasted Pobalano Pepper
3 Roasted Sweet Peppers (red, yellow, and orange)
2/3 Cup Corn
1 Cup Black Beans, Rinsed and Drained
4 oz Frozen Spinach, Thawed and Drained
8 oz Shredded Montery Jack Cheese
2 tsp Liquid Smoke
Cilantro
Cajun Spices
10 Uncooked Tortillas


Grill Chicken Breast.

Dice Peppers & Chicken

Put Liquid Smoke in a pan, Saute chicken, beans and veggies with spices untill done. Then mix in cheese untill everything is clumping together.

Please mixture into uncooked torillas then deep fry untill golden brown. 1-2 mins per side.

Stuffed Bell Peppers

One of my all time favorite meals. This is one of those meals that all mothers make differently. You can add or remove things each time you make it. This is one of the few meals I remember making with my mother when I was younger.



Amber's Stuffed Bell Peppers Recipe

Ingredients
6 large Green Bell Pepper
1 1/2 cups Rice
3 oz Onions
3 oz Sweet Roasted Red Bell Peppers
2 tsp Minced Garlic in Water
2 1/2 cups Traditional Pasta Sauce
9 oz Extra Lean Ground Turkey Breast
2 tbsp Italian Seasoning
1 tbsp Garlic Salt

Directions
Preheat oven to 350

Cut tops and deseed green bell peppers. (steam or boil peppers)

Prepare 1 1/2 cups of rice(dry rice) with 3 cups of water.

Diced onions and red peppers.

Saute turkey, onions, garlic and red peppers. Once done combined rice and sauce (2 cups) in the same pan.

Place 1/2 cup sauce in the bottom of a glass dish. Stay peppers close together and feel with rice mix. Sprinkle garlic salt on top.

Cook for 30 mins.


Makes 6 stuffed bell peppers.

1 stuffed bell pepper is 307 calories.

Pineapple Fried Rice

One of my friends made a stuffed pineapple. Never in my life have I seen a stuffed pineapple. I knew I had to attempt it. I must say to turned out pretty and tasted good.

This the meal you make if you have a friend or family member who looks down on everyone's food. The presentation alone will make them think twice before judging you. If you try it let me know what you think.


Amber's Pineapple Fried Reice


Ingredients

2 cups Thai Jasmine Rice
6 oz Chicken Breast
2 tsp Minced Garlic in Water
100 g Shallots
1 oz Green-bell Pepper
1 oz Roasted Red Bell Peppers
4 oz peas and carrots
1 tbsp Olive Oil
1 tbsp Tumeric
2 tbsp Soy Sauce
1 tbsp Spices, Curry Powder
1/4 - 1/2 cup Coconut Milk (thai Kitchen Lite)
1/2 cup Pineapple, Fresh

Directions

Precook rice day ahead.

Preheat oven to 350.

Cut pineapple lengthwise. Gut and save pineapple.

In wok fry diced chicken in olive oil and garlic.
Add shallots, bell peppers smelling good, add rice, pineapple, peas and carrots.

After rice is broken up and getting warm add Tumeric, Curry powder and Soy sauce.

Once rice is doing frying up. Place in gutted pinepples.Pour Coconut milk over rice and bake for 20 mintues.

Makes 2 servings
1 serving is 473 cals

Carribean Chicken Wings

This is a recipe I saw on Food Network by Sunny Anderson. It is delish! Once you make it you can easily just eyeball everything and make it sweeter or spicier. We tend to make it spicier with  2-3 habanero with some seeds. I also serve this with fresh pineapple (if available) or mango. If your on a diet stay away because its hard to eat just a few.

Ingredients


  • 1 habanero, seeded and chopped
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2 tablespoons sugar
  • 2 teaspoons fennel seed
  • 2 teaspoons cayenne pepper
  • 2 teaspoons allspice
  • 2 teaspoons dried thyme
  • 1 teaspoon ground ginger
  • 4 garlic cloves, chopped
  • 4 green onions, chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 7 pounds chicken wings

Directions


In a food processor, blend together all the ingredients but the chicken until smooth. Reserve 1 cup of marinade. Place chicken wings into a large resealable plastic bag and pour remaining marinade over them. Seal and marinate in the refrigerator 4 to 6 hours.

Preheat oven to 350 degrees F. Line 2 sheet trays with parchment. Remove chicken from bag and place on the baking sheets. Bake 20 minutes. Meanwhile, in a small saucepan bring reserved marinade to a boil. Reduce by 1/3 until it thickens slightly, about 10 minutes. After 20 minutes, remove chicken from oven. Brush chicken with the glaze. Raise the heat to 400 degrees F and cook chicken until cooked through, another 20 minutes.

Chicken Nuggets

What kid doesn't love chicken nuggets??? I know my Anyce loves them. I HATE McDonalds. We never get her nuggets from them, her nana does that for her lol. These nuggets are super easy and can be seasoned to your families taste.

Chicken Nuggets














1 -2  large Chicken Breast
1/2 cup Bread Crumbs (Italian)
1/2 cup Wheat Germ
Season to taste.
I use Garlic Powder, Poultry Seasoning, and Green Herbs.
Oil
Olive oil

Heat oil in a large skillet on medium-high heat (don't let it smoke)
Pound Chicken then cut into nuggets or use cookie cutters for shapes
Mix Bread Crumbs, Wheat Germ and seasoning.
Poor a small amount of Olive Oil in a dish.
Dip Chicken in breading mix then Olive oil then Breading mix again

Fry in oil for two minutes on each side keep rotating until juices run clear.

Chicken Enchiladas

Yummy Chicken enchiladas. I say American style because I don't really know how to make authentic Mexican food. Still very yummy!!!

Chicken Enchiladas














1 can  Shredded Chicken 15 oz
1/2 cup Water
1 can  Roasted Diced Green Chiles 4 oz(macayos)
1 can Vegetarian Refried Beans 16 oz
1 can Enchilada Sauce 12 oz (macayos)
1/2-1 cup of Pepper Jack shredded cheese
1/2 cup of Colby Jack  shredded cheese
Taco seasoning to taste
Cilantro to taste
Minced Garlic to taste
Tortilla Shells

Preheat oven to 400 degrees

Over the stove cook shredded Chicken and chiles
Add water and seasonings
Once water is evaporated
Add refried beans until all warm

In a large glass pan coat the bottom of the pan with sauce
Then assemble the enchiladas half pepper jack cheese half mixture
Place in glass pan and top with the rest of the sauce and colby jack cheese.
Cook for 30 minutes
Enjoy!!

Italian Chicken

Italian Chicken, The easiest and cheapest entree. It just happens to be Trevor's favorite. I have been making this since high school. I like to caramelize the sauce, makes it taste much better.










Italian Chicken

Italian dressing
Chicken breast
Garlic optional

Fry it up in a grill pan.
Caramelize sauce and serve.
Enjoy!!

Use leftovers for salads.

White Bean Chicken Peppers

White Bean Chicken Peppers

Olive oil
1 chopped onion
4 chopped garlic cloves
1 diced red bell pepper
1 can white beans
15 oz of shredded chicken
3-4 green bell peppers
2 cups water
parsley to taste
basil to taste
cajun seasons to taste
crushed red peper to taste
1/2 cup shredded cheddar

preheat oven to 350 degrees
cut green bell peppers in half, remove seeds and steam.
place peppers in glass dish

In pan heat oil add onion,garlic and red pepper, saute.
Then add drained white beans,shredded chicken, and 1 cup water.
Let water thicken and season to taste.

fill peppers with mix, add cup of water to bottom of glass dish.
Cover with tin foil bake for 35 mins.
remove tin foil cover in cheese, bake for 5 more mins or untill cheese is melted

Not Your Traditional Meatloaf

Here's a meatloaf that's yummy and different than the classic.




Not Your Traditional Meatloaf

Preheat oven to 350 degrees

Meatloaf

1-11/2 lbs of Ground Beef or Ground Turkey
2 tsp Garlic, Minced
1 Small Onion, Diced
1/2 Red Pepper, Grated/Shredded
1/2 Yellow Pepper, Grated/Shredded
1 cup bread crumbs ( I use Italian)
Oregano
Ginger
Black Pepper
2 Eggs
1/2 cup of Milk

Topping

2/3 cup Brown Sugar
1/3 cup Ketchup
2 tsp Worcestershire Sauce

Mix in a large bowl Meat,Garlic,Onion,Red Pepper,Yellow Pepper,Bread Crumbs,Oregano,Ginger,Black pepper.
Then add Eggs and Milk, Mix well.

Put meat in a oil loaf pan and bake for 40 mins
Then spread topping bake for 10 mins or broil for 5
